It started with a slice in Trastevere

In 2019, our founder Marco spent three weeks eating his way through Rome. Not the tourist traps near the Colosseum — the real places. The hole-in-the-wall forno on Via del Governo Vecchio where the bianca sells out by 10am. The al taglio counter in Testaccio where regulars point at what they want without saying a word. The pinsa spot in Prati that doesn't have a sign.

He came home to Chicago with a notebook full of names, addresses, and tasting notes — and a problem. None of his friends knew what Roman pizza was. They'd heard of Neapolitan. They knew New York. But the Roman tradition — older, more varied, arguably more interesting — was almost invisible outside Italy.
